What is the course about?
Until now, the way to create a new recipe has been through researching recipe books to find out the ingredients, quantities required and techniques to achieve a good result. Common recipes used nowadays have been strongly linked to traditional recipes which limits the creativity of the professional.
With the desire to overcome these boundaries, Jordi Bordas has developed a B·Concept which has allowed you to create your own recipes from scratch.
In this course we teach professionals to develop new recipes based on parameters that each one chooses and graduates. We show you the results of Jordi Bordas: healthy, light and tasty pastry.
What will we do?
Presentation of the methodology. Tasting different recipes. Formulate and balance creamy, compotes and mousses, depending on the type of production. Performing a wide range of entremets rational and efficient adapted to current consumer needs.
How will we do it?
To absorb the maximum knowledge, the course is based on observing the chef carrying out the recipes and the more interesting processes are done by the students. Our courses are limited to a maximum of 8 participants.
What is included?
Recipe booklet and signed certificate. Coffee and lunch served during course. Also, the participants will take home all creations made on the course.
What should I bring?
Comfortable working clothes. We will provide you with an apron to wear during the course.
