This course is destined for pastry students and profesionals who wish to learn how to make original torrones – classic Spanish confections – with different textures, like marzipan, praline, gianduja, pâte de fruit, ganache or caramel.

What is the course about?

During the 3 days of the course, the students – guided by Lluc Dalmau – will learn how to elaborate a collection of original torrones. They will also discover new pastry techniques that they will be able to apply to their own creations. Adrianna Jaworska, on her part, will provide information on new pastry ingredients that can be used to create healthier, lighter and tastier pastry.
In addition to learning basic pastry recipes, like marzipan, praline, gianduja, pâte de fruit, ganache, crunchies and caramel (some of them gluten and lactose-free or vegan), Lluc will show and explain how to apply different techniques in order to create original and surprising decorations.

Day 1:Presentation on healthy Ingredients
Elaboration of pralinés, gianduja, pâte de fruit, crunchies, etc.
Day 2:Elaboration of torrones’ cases
Elaboration of marzipan, ganache, caramel, etc.
Day 3:Decoration techniques: velour paintings, chocolate decorations
Final buffet and commented tasting

What should I bring?

Comfortable working clothes. We will provide you with an apron to wear during the course.

Where is the school?

We are only 15km from the centre of Barcelona city! Carretera de Barcelona 12, Viladecans 08840, Barcelona (Province).

How to arrive?
  • If you are coming from the Airport of Barcelona-El Prat, Terminal 1, you can:
    • Take bus L99 and stop in Viladecans, you will arrive at 5 minutes’ walk. Line map.
    • Take a taxi to Viladecans, it should cost around 25-30€.
  • If you are coming from any hotel in Viladecans you can arrive in 10 or 15 minutes (walking).
  • If you are coming from Barcelona city you can take public transport (for this, we recommend you this application). (We don’t recommend accommodation in Barcelona city because in the morning the transport duration could be 1 hour or more.)
