{"id":2311,"date":"2018-09-05T00:00:00","date_gmt":"2018-09-05T00:00:00","guid":{"rendered":"https:\/\/jordibordas.com\/fr\/new\/llevamos-el-proyecto-signature-fruit-a-asia\/"},"modified":"2022-09-13T08:53:48","modified_gmt":"2022-09-13T06:53:48","slug":"llevamos-el-proyecto-signature-fruit-a-asia","status":"publish","type":"post","link":"https:\/\/jordibordas.com\/fr\/blog\/llevamos-el-proyecto-signature-fruit-a-asia\/","title":{"rendered":"\u00a1Llevamos el proyecto Signature Fruit a Asia!"},"content":{"rendered":"\n<p>El pasado mes de agosto viajamos a Asia para presentar all\u00ed\u00a0Signature Fruit, un proyecto conjunto con\u00a0<a href=\"https:\/\/www.ravifruit.com\/\" target=\"_blank\" rel=\"noreferrer noopener\">Ravifruit<\/a>\u00a0y los chefs Philippe Rigollot y David Wesma\u00ebl, que quiz\u00e1 ya conoc\u00e9is, pero del que queremos hablaros un poco m\u00e1s a fondo.<\/p>\n\n\n\n<p>Como sab\u00e9is, venimos colaborando con la marca desde hace tiempo y tras casi dos a\u00f1os de puesta en com\u00fan de ideas, reflexi\u00f3n, investigaci\u00f3n e intercambio de opiniones, en 2017 presentamos el resultado:&nbsp;<strong>un recetario que a\u00fana el mundo de las frutas con la pasteler\u00eda<\/strong>.<\/p>\n\n\n\n<p>Presentando nuevas t\u00e9cnicas y con un enfoque que busca una pasteler\u00eda m\u00e1s sana, lo cual es m\u00e1s que acorde con\u00a0<a href=\"https:\/\/jordibordas.com\/fr\/metodo-bconcept-jordi-bordas\/\">nuestro m\u00e9todo B\u00b7Concept<\/a>, clasificamos los contenidos por aplicaci\u00f3n y por sabor, resultando en 9 tipos diferentes de aplicaci\u00f3n por cada uno de los m\u00e1s de 50 sabores en forma de pur\u00e9s de los que dispone la marca.<\/p>\n\n\n\n<p>Dada la gran acogida que el proyecto tuvo en Europa durante el a\u00f1o pasado, el paso l\u00f3gico era seguir comparti\u00e9ndolo, por lo que&nbsp;<strong>nos fuimos a presentarlo a Asia<\/strong>, realizando paradas en Singapur, Shangh\u00e1i y Pek\u00edn.<\/p>\n\n\n\n<div style=\"height:40px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Durante dos semanas y recorriendo las tres ciudades, realizamos un total de seis cursos demostrativos con recetas del Signature Fruit en nuestras creaciones. Pero durante el tour, no solo nos centramos en los pur\u00e9s de frutas y sus aplicaciones, sino que, adem\u00e1s, tratamos temas muy importantes para nosotros como\u00a0<strong>glaseados sin colorante aprovechando el color natural de las frutas, cremosos veganos o mousses sin lactosa y de dulzor equilibrado utilizando tan solo el 10% de az\u00facar a\u00f1adido en los pur\u00e9s<\/strong>. Incluso presentamos elaboraciones tambi\u00e9n presentes en los\u00a0<a href=\"https:\/\/jordibordas.com\/fr\/cursos-de-pasteleria-online\/\">cursos del Aula<\/a>, como nuestro Oval
