Y, all\u00e1 que nos fuimos a hablar sobre pasteler\u00eda 3D y el proyecto que hemos desarrollado junto a\u00a0<a href=\"http:\/\/www.dinarakasko.com\/\" target=\"_blank\" rel=\"noreferrer noopener\">Dinara Kasko<\/a>\u00a0durante el \u00faltimo a\u00f1o. Aprovechamos aquella charla como excusa para contaros un poco m\u00e1s aqu\u00ed, ya que la\u00a0<strong>producci\u00f3n de moldes con dise\u00f1os personalizados<\/strong>\u00a0est\u00e1 en auge y seguro que os parece interesante.<\/p>\n\n\n\n<p>Dinara y Jordi se conocieron personalmente durante un\u00a0<a href=\"https:\/\/jordibordas.com\/fr\/cursos-de-pasteleria-online\/\">Curso de pasteler\u00eda seg\u00fan el m\u00e9todo B\u00b7Concept<\/a>\u00a0impartido en Ucrania en 2017, pero sus moldes nos ten\u00edan enamorados desde mucho antes. Tras su encuentro, y despu\u00e9s de varias conversaciones apasionantes sobre\u00a0<strong>dise\u00f1o y desarrollo de recetas<\/strong>, decidieron combinar sus puntos fuertes e iniciar un proyecto en com\u00fan. \u00bfEl resultado? Dos fant\u00e1sticos entremets que elaboraremos en los cursos de B\u00b7Concept:\u00a0<strong>Ferro<\/strong>\u00a0y\u00a0<strong>Macadamia<\/strong>.<\/p>\n\n\n\n<div style=\"height:41px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>FERRO<\/strong><\/h3>\n\n\n\n<p>El nombre de \u201cFerro\u201d ya os habr\u00e1 dado alguna pista. Su dise\u00f1o est\u00e1 inspirado en los mont\u00edculos formados en la superficie de un&nbsp;<strong>fluido ferromagn\u00e9tico<\/strong>&nbsp;cuando se expone a una fuerza magn\u00e9tica, un efecto curioso que aporta a este entremet un aspecto org\u00e1nico y atractivo.<\/p>\n\n\n\n<p>Una vez tuvimos clara la forma, quisimos desarrollar una\u00a0<strong>receta 100% vegana<\/strong>. Todo un reto dado que, hasta la fecha, no hab\u00edamos hecho ning\u00fan postre completamente vegano. Pero, fieles al\u00a0<a href=\"https:\/\/jordibordas.com\/fr\/metodo-bconcept-jordi-bordas\/\">B\u00b7Concept\u00a0<\/a>y al estudio de las necesidades, analizamos los sabores y las caracter\u00edsticas de los ingredientes que ten\u00edamos en mente y desarrollamos cada una de las texturas.<\/p>\n\n\n\n<div style=\"height:40px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>MACADAMIA<\/strong><\/h3>\n\n\n\n<p>Siguiendo con el inter\u00e9s de Dinara en los&nbsp;<strong>patrones de repetici\u00f3n<\/strong>&nbsp;que podemos encontrar en la naturaleza, dise\u00f1amos el entremet \u201cMacadamia\u201d, inspirado en los&nbsp;<strong>minerales<\/strong>&nbsp;o&nbsp;<strong>materiales p\u00e9treos<\/strong>. \u00bfNo os recuerda a la ladera rocosa de una monta\u00f1a?<\/p>\n\n\n\n<p>En cuanto a sabores, maridar el&nbsp;<strong>chocolate con leche<\/strong>&nbsp;con la&nbsp;<strong>nuez de Macadamia<\/strong>&nbsp;nos pareci\u00f3 la combinaci\u00f3n perfecta. Adem\u00e1s, elegimos la cobertura con leche Maracaibo Criolait 38% de&nbsp;<a href=\"https:\/\/www.felchlin.com\/en\">Felchlin<\/a>, hecha con cacao de la regi\u00f3n Sur del Lago en Venezuela, por sus notas de miel y caramelo. El desenlace fue una llamativa forma con capas interiores de&nbsp;<strong>sabores suaves y cremosos<\/strong>.<\/p>\n\n\n\n<div style=\"height:40px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Como veis, en ambos entremets nos centramos en la&nbsp;<strong>forma<\/strong>&nbsp;y en los&nbsp;<strong>interiores<\/strong>, dejando de lado las decoraciones ya que, tanto Dinara como Jordi, son fieles a la filosof\u00eda&nbsp;<strong>\u201cmenos es m\u00e1s\u201d<\/strong>&nbsp;en cuanto a acabados se refiere.<\/p>\n\n\n\n<p>Para acabar, os habr\u00e9is dado cuenta de que el\u00a0<strong>flujo de trabajo<\/strong>\u00a0en los dos casos fue en la misma direcci\u00f3n: primero la forma y despu\u00e9s el interior. \u00a1Pura coincidencia! Realmente, la pasteler\u00eda 3D funciona en los dos sentidos. En ocasiones pensamos primero la forma y buscamos qu\u00e9 interiores son los m\u00e1s adecuados para ella, como es el caso. En otras, la inspiraci\u00f3n fluye a la inversa, tenemos clar\u00edsimo el sabor y queremos encontrar la forma perfecta.
