Tenemos la suerte de contar con dos personas en nuestra escuela que han pasado por esa experiencia:&nbsp;<strong>Jordi<\/strong>, por supuesto, pero tambi\u00e9n&nbsp;<strong>Lluc Dalmau&nbsp;\u2013 formador del Aula Jordi Bordas<\/strong>&nbsp;y jefe de pasteler\u00eda de&nbsp;<a href=\"https:\/\/santacreu.com\/\" target=\"_blank\" rel=\"noreferrer noopener\">Santacreu Viladecans<\/a>. Lluc se estren\u00f3 el pasado enero, participando en la&nbsp;<a href=\"https:\/\/www.coppamondogelateria.it\/en\/\" target=\"_blank\" rel=\"noreferrer noopener\">Copa del Mundo de Helader\u00eda 2020<\/a>&nbsp;que, como cada edici\u00f3n, se celebr\u00f3 en el marco de la feria Sigep (Rimini, Italia).<\/p>\n\n\n\n<p>El equipo espa\u00f1ol lo capitane\u00f3&nbsp;<a href=\"http:\/\/www.artesanssoler.com\/\" target=\"_blank\" rel=\"noreferrer noopener\">Albert Soler<\/a>&nbsp;\u2013 campe\u00f3n de Espa\u00f1a de Helader\u00eda 2019. Bajo su direcci\u00f3n estuvieron&nbsp;<a href=\"http:\/\/www.albertroca1987.com\/\" target=\"_blank\" rel=\"noreferrer noopener\">Albert Roca<\/a>&nbsp;\u2013 pasteler\u00eda Sant Croi (Barcelona) y dos veces Mejor Croissant Artesano de Mantequilla de Espa\u00f1a \u2013,&nbsp;<a href=\"https:\/\/isomaltmayterodriguez.com\/\" target=\"_blank\" rel=\"noreferrer noopener\">Mayte Rodr\u00edguez<\/a>&nbsp;\u2013 especialista en caramelo tratado \u2013,&nbsp;<a href=\"https:\/\/www.heladeria.com\/chefs-heladeros\/ficha\/46-lluis-ribas\" target=\"_blank\" rel=\"noreferrer noopener\">Llu\u00eds Ribas<\/a>&nbsp;\u2013 qu\u00edmico de formaci\u00f3n y experto en formulaci\u00f3n heladera \u2013 y&nbsp;Lluc Dalmau.<\/p>\n\n\n\n<p><strong>El combinado espa\u00f1ol fue sexto<\/strong>&nbsp;de un total de once participantes, justo a la mitad de la tabla,&nbsp;<strong>llev\u00e1ndose Italia el oro<\/strong>. Presentaron una apuesta arriesgada centrada en la&nbsp;<strong>magia<\/strong>&nbsp;que, tal vez no obtuvo la victoria, pero s\u00ed sirvi\u00f3 para&nbsp;<strong>aprender y seguir creciendo<\/strong>. Un esfuerzo que se refleja en casi 150 quedadas, m\u00e1s de 1000 horas de trabajo y unos 21.000 kil\u00f3metros recorridos, cifras que han comentado los integrantes del equipo.<\/p>\n\n\n\n<p>Hemos querido transmitiros toda esta experiencia de cerca, con Lluc y Jordi como protagonistas. Por eso, hace unos d\u00edas hicimos un\u00a0<strong>directo<\/strong>\u00a0en el que ambos contestaron a vuestras preguntas. La visi\u00f3n de\u00a0la veteran\u00eda de Jordi\u00a0\u2013\u00a0<a href=\"https:\/\/www.youtube.com\/watch?v=Tgw0ktL39vo&amp;t=11s\">4\u00ba en la Copa del Mundo de Helader\u00eda 2008, 19\u00ba en la Coupe du Monde de la P\u00e2tisserie 2009, pero Campe\u00f3n del Mundo de Pasteler\u00eda tan solo dos a\u00f1os despu\u00e9s\u00a0<\/a>\u2013, contrarrestada con\u00a0<strong>la novedad de Lluc<\/strong>. Una conversaci\u00f3n a dos bandas en la que se puede vislumbrar el\u00a0<strong>\u00e9xito alcanzable si se trabaja duro y con objetivos claros<\/strong>. Adem\u00e1s, han resumido en conjunto las\u00a0<strong>tres fases<\/strong>\u00a0en las que recomiendan dividir\u00a0<strong>la preparaci\u00f3n de este tipo de competiciones<\/strong>.<\/p>\n\n\n\n<div style=\"height:40px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h4 class=\"wp-block-heading\">Tres fases para preparar una competici\u00f3n internacional de pasteler\u00eda o helader\u00eda por equipos<\/h4>\n\n\n\n<p><strong>\u2022&nbsp;Primera fase: ORGANIZACI\u00d3N.<\/strong>&nbsp;Una vez seleccionados los miembros del equipo por competencias, la prioridad debe ser seleccionar las tareas de cada uno y la definici\u00f3n de los objetivos, tanto globales del grupo como individuales de los integrantes. Se realiza tambi\u00e9n una recogida de ideas sobre el tema que se utilizar\u00e1 durante la competici\u00f3n y se efect\u00faa un an\u00e1lisis de buenas pr\u00e1cticas. Por \u00faltimo, se establece un calendario de trabajo en conjunto y tambi\u00e9n particular.<\/p>\n\n\n\n<p><strong>\u2022&nbsp;Segunda fase: CREATIVIDAD.<\/strong>&nbsp;Es el momento de poner en marcha las ideas y planificar tanto las diferentes elaboraciones como las piezas art\u00edsticas.<\/p>\n\n\n\n<p><strong>\u2022&nbsp;Tercera fase: TRABAJO.<\/strong>&nbsp;Seg\u00fan el tiempo establecido por la competici\u00f3n, hay que concretar tanto el orden como qui\u00e9n realizar\u00e1 cada elaboraci\u00f3n. El entreno debe repetirse el m\u00e1ximo de veces posible con el fin de ganar seguridad, rapidez en los gestos y reducir cada vez m\u00e1s los tiempos.<\/p>\n\n\n\n<p>Una vez llega la hora de la verdad, hay que ser extremadamente&nbsp;<strong>ordenado<\/strong>,&nbsp;<strong>r\u00e1pido<\/strong>&nbsp;y&nbsp;<strong>limpio<\/strong>.
