Son agentes texturizantes muy vers\u00e1tiles, capaces de sustituir tanto a la grasa como al az\u00facar; y que, adem\u00e1s, nos aportan numerosos beneficios para la salud. En este caso, nos centraremos en la fibra de achicoria. <\/p>\n\n\n\n<p>El pasado 28 y 29 de junio, tuvimos la oportunidad de participar en el <a href=\"https:\/\/europlantbiology2020.org\/\" target=\"_blank\" rel=\"noreferrer noopener\">Plant Biology Europe Congress 2021<\/a>. Formamos parte de un evento \u00fanico y multidisciplinario (<em>\u00ab<\/em>Let\u2019s eat CHICque. Gourmet Aftertastes<em>\u00bb<\/em>), donde presentamos dos postres ricos en fibra, y hablamos de los beneficios de utilizar la inulina y la oligofructosa en nuestras elaboraciones de pasteler\u00eda.<\/p>\n\n\n\n<p>En la intersecci\u00f3n entre el arte, la ciencia y la gastronom\u00eda; el evento destac\u00f3 tanto la composici\u00f3n molecular de la inulina de achicoria y su derivado\u2014la oligofructosa\u2014como sus propiedades nutricionales, texturizantes y organol\u00e9pticas.<\/p>\n\n\n\n<p>Para esta ocasi\u00f3n tan especial, presentamos dos postres: un<em> <strong>souffle<\/strong><\/em><strong> de chocolate sin az\u00facar<\/strong>, y nuestra versi\u00f3n del cl\u00e1sico <strong><em>lemon pie<\/em>,<\/strong> sin gluten y sin lactosa. Ambas recetas fueron creadas a trav\u00e9s el <a href=\"https:\/\/jordibordas.com\/fr\/metodo-bconcept-jordi-bordas\/\">m\u00e9todo B\u00b7Concept<\/a>, y siguiendo nuestra filosof\u00eda de pasteler\u00eda m\u00e1s saludable, m\u00e1s ligera, y m\u00e1s sabrosa. <\/p>\n\n\n\n<p>Durante el evento, m\u00e1s de 40 participantes tuvieron la oportunidad de seguir el v\u00eddeo tutorial online y ejecutar un postre de su elecci\u00f3n.
