Aunque son dif\u00edciles de reemplazar en nuestras elaboraciones, \u00a1no es imposible!<\/p>\n\n\n\n<p>Para ello, es importante conocer qu\u00e9 funci\u00f3n realizan las claras, las yemas y el huevo entero en cada receta, y as\u00ed saber por qu\u00e9 ingredientes los podemos sustituir. Esto es algo que tratamos en profundidad en el <a href=\"https:\/\/jordibordas.com\/fr\/curso-online-de-pasteleria-bconcept\/\" target=\"_blank\" rel=\"noreferrer noopener\">curso de Pasteler\u00eda B\u00b7Concept online y extendido<\/a>, junto con el conocimiento de las mol\u00e9culas y el dominio de la formulaci\u00f3n de recetas.<\/p>\n\n\n\n<p>Las <strong>claras<\/strong> contienen un alto porcentaje de agua (88 %) y prote\u00ednas (11 %), as\u00ed como otros macro-nutrientes en peque\u00f1as cantidades. Las prote\u00ednas son sin duda las protagonistas, ya que dan estructura a muchos productos de pasteler\u00eda a trav\u00e9s del proceso de gelificaci\u00f3n. Para incorporar aire a nuestra masa, podemos utilizar prote\u00ednas vegetales como las de la soja, la patata \ud83e\udd54 o la acuafaba.<\/p>\n\n\n\n<p>Por otro lado, adem\u00e1s de agua (50 %) y prote\u00ednas (15 %), las <strong>yemas de huevo<\/strong> \ud83e\udd63 contienen un 30% de grasa compuesta tanto por grasas saturadas como por insaturadas. Gracias a esta combinaci\u00f3n, \u00a1las yemas nos aportan textura y cremosidad en nuestras elaboraciones!
