Empezando por la definici\u00f3n de las necesidades (intolerancias, valores, salud, tendencias, costes\u2026) y terminando por el ajuste del dulzor y el extracto seco para que tu receta sea 100% estable.<\/p>\n\n\n\n<p>Cada tipo de harina, provenga o no de un cereal, tiene propiedades espec\u00edficas y aporta una textura y unas caracter\u00edsticas sensoriales distintas a la receta. Unas son excelentes para hacer pan, otras para mantener tiernas las masas durante m\u00e1s tiempo y otras contienen propiedades nutricionales interesantes.<\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"has-black-color has-text-color has-background\" style=\"background-color:#edf0f1\"><strong>\u00bfCu\u00e1les son nuestras harinas sin gluten preferidas? Las que utilizamos en nuestras elaboraciones de pasteler\u00eda son la harina de trigo sarraceno y la harina de arroz integral.<\/strong><\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>La primera de ellas es un grano duro de forma trigonal, considerado un pseudocereal con un perfil nutricional \u00fanico. Este tipo de harina es rica en magnesio, f\u00f3sforo, calcio y contiene un alto contenido en fibra y prebi\u00f3ticos.<\/p>\n\n\n\n<p>Por otro lado, la harina de arroz puede ser de arroz blanco o integral, dependiendo de si se retira el salvado o no.
