After winning the World Pastry Cup in 2011, Jordi Bordas founded a pastry school in Barcelona (Viladecans) with the goal of passing on all his experience and knowledge to the next generation of pastry chefs. Jordi and his team are currently leading an unprecedented educational initiative.
Thanks to his boundless curiosity and his drive to innovate and revolutionize the world of pastry, Jordi Bordas has spent the last few years of his professional career researching and studying in depth the most complex aspects of this culinary discipline. This process led him to develop Concept B, his method for creating recipes from scratch, based on a solid foundation of knowledge and mastery of a unique, step-by-step method he devised himself.
Adrianna Jaworska earned her pastry degree from the prestigious Cordon Bleu Kobe in Japan, and thanks to her dedication and hard work, she was awarded the “Hautes Études du Gout” scholarship by the Cordon Bleu Paris and the University of Reims Champagne-Ardenne (France).
After earning two graduate degrees in food studies, Adrianna worked in Japan, Poland, and Spain. In Poland, she taught the history of pastry and new trends at SWPS University.
Adrianna joined Jordi Bordas's team in 2017, becoming head of the R&D&I department with the goal of developing new products and exploring the connection between science and pastry—two fascinating fields that have a lot in common.
Mariona Fidalgo began her career by studying pastry, baking, and confectionery at the Girona School of Hospitality and Tourism. Her interest and desire to learn led her to further her training under renowned chefs such as Miquel Guarro and Enric Rovira. She also completed internships at the Sweets by Abraham Balaguer pastry shop and at the Chocolate Academy in Vic.
She joined Jordi Bordas's team in 2016, and began a new learning journey with him, assisting him in local and international training sessions.
At the same time, Mariona entered the chocolate figurine contest at the museum in Barcelona and placed second twice.
In 2019, she joined the research and development team, developing new recipes for many of the brand's projects.
Inés began her career in the world of pastry (without even realizing it) while she was studying architecture and art history. Her technical, humanities, and artistic training, along with her subsequent training as a pastry chef at the Hoffman School in Barcelona, have made Inés an exceptional professional, who would later join Jordi Bordas’s team.
After working at various renowned bakeries, such as La Pastisseria in Barcelona and Santacreu, Inés has been with us since the project’s inception, witnessing the birth of the B-Concept method and supporting every step of the way with enthusiasm and dedication.
She is currently responsible for preparing and reviewing all training materials for the courses and ensuring that every period and comma is in the right place. Her impeccable work and her ability to transform complex recipes and processes into clear, easy-to-understand texts make her an essential member of the team.
Trained in interior design at the renowned Elisava School in Barcelona and with extensive experience as a graphic designer at design studios and food companies such as the Entrelagos chocolate shop and Sosa Ingredients, Maria is one of Jordi Bordas’s newest hires—and she has made quite an impression. Talented and hardworking, she has an exquisite eye for the design and layout of all the training materials you’ll find in our courses. Plus, she brings a positive vibe wherever she goes and is always ready to lend a hand to anyone who needs it. Without a doubt, she’s a new standout on the team.
With a background in administration and finance, Puri has proven herself, throughout her professional career, to be a loyal and dedicated employee in every project she has worked on. She joined Jordi Bordas’s team about three years ago, and since then, the days have been happier and more fun. Her thing is numbers, emails, and phone calls—but above all, people. She’s always there to support her colleagues with whatever they need and to take care of the students with her warmest smile.
With a degree in advertising and public relations and as a digital marketing specialist, Júlia is responsible for designing, creating, and sharing content across all our social media channels—from Instagram to YouTube, including our new “Pastry and Science” channel on Telegram. Her communication skills and passion for connecting with people make Júlia a key member of the team, able to convey our values and ideas to the world with honesty and transparency. We love her entrepreneurial spirit and proactive attitude, which make every day a new opportunity to discover a little piece of our story.
Ramón has an innate ability to capture stories with his camera and convey their essence. His extensive experience in producing audiovisual works for various projects, along with his unique perspective and creative talent, have made this outstanding professional a key pillar of Jordi Bordas’s team.
His main responsibility is to ensure that recordings for the online school and live broadcasts are of the highest quality by maintaining perfect control over the camera, lighting, and sound at all times.
