15. Lime, lemon, and pistachio tartlet

A tartlet made with pistachios and two citrus fruits: lime and lemon. A perfect balance between the creaminess of the pistachios and the acidity of the citrus fruits. On a pistachio sablé base, we find a pistachio purée, a lime and lemon cream, and a meringue. We finish with a decoration of lime and lemon zest and pistachio pieces.
