6. Ferro

Ferro is an entremets that we designed alongside the pastry designer Dinara Kasko. Its shape was inspired by the ferromagnetic fluid. It is a vegan entremets that combines tropical, fresh, and acidic flavors from strawberry, raspberry, mandarin, mango, cactus flower, and ginger. We also added different ingredients made from coconut, such as coconut sugar and coconut flour.
