14. Apple Entremets

An hors d'oeuvre in which we have paired apple and lime. In addition, we have worked with hazelnut to create a contrast between the acid and refreshing flavor of the apple and the toasted flavor of the nut. From bottom to top we found pecan and apple granola, a lime sponge cake, a creamy hazelnut praline, a gelled apple and lime compote, an apple mousse, and we finished with a decoration of very thin apple slices with a glossy finish.
