5. How to choose a foaming agent

In this lesson, we discuss what key factors to keep in mind when choosing a foaming agent, in order to find the most adequate one for your recipe, like for instance: the texture you want to create (a sponge cake, a mousse, etc.), whether we want it to be a vegan, gluten free, lactose free recipe, and the ingredients that you need to make your airy textures more stable.
