Choc 'n' Raspberry

The Choc ‘n’ Raspberry is an entremets with which we wanted to show how fibers can help improve the nutritional value of a product that is made with traditional ingredients such as milk chocolate.
The different layers in this entremets are: an almond and vanilla sugar-free cake, a gelled raspberry compote, a milk chocolate mousse, a milk chocolate and vanilla creamy, and a chocolate coating with cocoa nibs, which provides a crunchy touch.
