haven’t been able to find oligofructose in Canada. What can I use as a substitute and in what proportion? I would really appreciate your help.

Oligofructose can be substituted with allulose or yacon syrup. If you substitute with allulose, you can use a 1:1 ratio. If you substitute with yacon syrup, you will need to adjust the water content in your recipe, as yacon syrup contains 30% water.

Also, is there an alternative that can be used instead of allulose?
You can use native inulin together with a high-intensity sweetener such as stevia leaves, but you must bear in mind that when adding inulin to the recipe, you have to increase the percentage of water in your recipe, as inulin has a high water absorption capacity.
