Hello Pascale,

Yes it is possible, you just have to keep in mind that if you modify an ingredient you have to adjust both the dry extract and the water in the recipe, i.e. if you use a chocolate couverture with less fat, adjust the fat you are taking out of it.
if you substitute the yacon syrup, remember that it has a % of water that you will have to adjust in the recipe.
