Hello! I am doing the raspberry and almond cake and I’m a bit confused about raspberry gelled compote as I thought that this is what was used in the raspberry mousse as the “raspberry purée”, but then in the final assembly of the cake the compote is brought up again…
So is the compote left aside to be used in the final cake assembly? And the raspberry purée is just a purée (is it a product bought?) that is used just for the mousse?
Can you please clarify this? Thank you!
