How to make a more conscious pastry

The ingredients we choose for our preparations are as important as those we choose for our daily diet, since everything we eat has a direct impact on our health.

At Jordi Bordas Pastry School we are committed to a more conscious and coherent pastry with the world we want, đź’š and to achieve this, we start from the reduction of certain ingredients and the increase or incorporation of others that provide benefits at a nutritional and functional level.

What ingredients do we incorporate? 🥄 F lours with complex carbohydrates such as brown rice or buckwheat flour, rich in fiber and nutrients. We also add monounsaturated and polyunsaturated fats from olive oil, nuts and seeds. These help us to absorb essential vitamins such as K, E, D and A; to promote good weight regulation; to protect the heart and the rest of the body from accelerated aging and to improve our hormonal functions.

We increase the amount of fiber present in the recipes by incorporating, for example, soluble fiber from chicory root (inulin), which is also a complex carbohydrate. We also use coconut sugar as a less harmful alternative to white sugar. This natural sweetener is rich in minerals such as potassium, magnesium and iron, which are essential for proper cellular functioning. Complex carbohydrates help control the rate of glucose absorption in the intestine, thus maintaining more stable blood levels, and support the body's cellular functions with its minerals and vitamins. It strengthens our immune system, making us much more resistant to any disease!

Fortunately, nowadays we do not have to limit ourselves to the abusive use of fats and sugars and we can bet on more nutritious ingredients such as the ones mentioned above.
