How to make a more conscious pastry
The ingredients we choose for our dishes are just as important as those we choose for our daily diet, because everything we eat has a direct impact on our health.
At the pastry Bordas pastry School, we are committed to a pastry mindful pastry that aligns with the world we want to see, đź’š and to achieve this, we start by reducing certain ingredients and increasing or incorporating others that offer nutritional and functional benefits.
“We start by reducing certain ingredients and increasing or adding others that provide nutritional and functional benefits.”
What ingredients do we include? 🥄 Flours containing complex carbohydrates, such as brown rice flour or buckwheat flour, which are rich in fiber and nutrients. We also add monounsaturated and polyunsaturated fats from olive oil, nuts, and seeds. These help us absorb essential vitamins like K, E, D, and A; promote healthy weight management; protect the heart and the rest of the body from accelerated aging; and improve our hormonal functions.
We increase the amount of fiber in our recipes by adding, for example, soluble fiber from chicory root ( inulin), which is also a complex carbohydrate. We also use coconut sugar as a healthier alternative to white sugar. This natural sweetener is rich in minerals such as potassium, magnesium, and iron, which are essential for proper cellular function. If you’d like to learn about other alternatives to white sugar, don’t miss the free masterclass “How to Make pastry Recipes.”

Complex carbohydrates help regulate the rate at which glucose is absorbed in the intestines, thereby maintaining more stable blood sugar levels, and support the body’s cellular functions with their minerals and vitamins. They strengthen our immune system, making us much more resistant to illness!
Fortunately, these days we don’t have to limit ourselves to excessive consumption of fats and sugars; instead, we can opt for more nutritious ingredients like the ones mentioned above.
