Healthy pastry, our contribution to the Health Hackers Meeting
Does healthy pastry actually exist? At Jordi Bordas we have always been very careful about using this adjective since we believe that in order to be 100% healthy, a recipe needs to be composed only of ingredients beneficial for our health. That is why we typically refer to our products as “healthier”.
For technical reasons, it is often difficult to eliminate from our recipes those ingredients that are detrimental to our health, but it is not impossible! Over the last few weeks, we have been working on two very special products to which, yes, we can attribute the label "healthy!healthy". Thanks to all the knowledge that the B·Concept method gives us, we are able to formulate very specific recipes with the attributes we want.
It all began when our friend Xevi Verdaguer, a specialist in psychoneuroimmunology, asked us to participate in the second edition of Health Hackers Meeting, an event organized by him and his team during 28th and 29thof September in Mas Les Comelles Parc Cultural.
The challenge was to develop recipes using functional and nutritious ingredients—ones that not only wouldn’t harm our health but would actually improve it. As you know, we love this kind of challenge, and, as you might expect, we got right to work. The result? A spectacularbuckwheat and seed breadand a deliciouscocoa cake.
We would like to take this opportunity to thank Xevi for the chance to collaborate. We have learned a great deal about ingredients and their impact on our digestive system. This knowledge is certainly vital when it comes to creating our own recipes and continuing to uphold the three basic pillars of our pastry: healthier, lighter, and tastier.
