Science and Cooking World Congress 2022

This November in Barcelona the Science & Cooking World Congress 2022 took place, which we have had the opportunity to attend together with our team, giving us the opportunity to present the fundamentals of the B·Concept method.

Adrianna Jaworska, alongside other renowned chefs, such as Miquel Guarro, Joyce Galvão, Francisco Migoya and Josep Mª Guasch, was part of the round table that discussed the evolution of ingredients in pastry.

We highlighted the revolutionary role of fibers in the food sector, explained how we use them in our recipes, as well as stressed the importance of educating our customers about clean label ingredients or the veganism movement... Undoubtedly, the future of pastry must take into account consumer needs, such as the demand of sugar reduction or the incorporation of fibers and other healthier ingredients into our recipes.

“We currently witness the need to go back to the origin, to raw material, pure flavor and whole ingredients instead of refined ones”, as Adrianna stated during the discussion.

For this reason, for the brunch we prepared our version of the Lemon Pie 🍋 that was made with a high fiber content and only 3g of added sugar per serving.

Finally, we did a healthier pastry workshop, in which we did a tasting of a meringue without added sugars and also of a vegan dessert that always accompanies us in the most special moments: Tangerine. 🍊 Nutritionists, chefs, entrepreneurs, food engineers and scientists from different parts of the world joined us at this prestigeous event.
