Exotic entremets

A dessert full of exotic and refreshing nuances, in which we use fruits such as mango and coconut, along with a nut like the almond. We’ve chosen to highlight the natural flavors and colors of the ingredients themselves. The different textures, from bottom to top, are: a coconut crisp, a dacquoise and coconut mousse, and a creamy layer that combines tropical and tangy flavors of banana, mango, passion fruit, and coconut. We achieve the final touch on this dessert by incorporating a glaze and a brunoise of fresh mango, along with coconut shavings and passion fruit seeds.
