Madeleine XL au thé matcha et yuzu

In this individual dessert, we primarily use matcha tea, an ingredient that transports us to Japan and that we absolutely love. We’ve paired it with a citrus fruit like yuzu, which adds tart and refreshing notes to the dessert. It consists of a financier and a matcha cream, a yuzu mousse, a matcha glaze, and a thin layer of sprinkled matcha that coats the dessert in a subtle and elegant way.
