In this individual dessert, we work mainly with matcha tea, an ingredient that transports us to Japan and that we love. We have combined it with a citrus fruit such as yuzu, which adds acidic and refreshing notes to the creation. It consists of a financier and a creamy matcha tea, a yuzu mousse, a matcha glaze, and a thin layer of powdered tea that covers the dessert in a subtle and elegant way.
