A classic petit gâteau in which we balanced the dairy and soft flavor from the cream cheese with that of the mango, which is more acidic and refreshing. The different textures in this petit gâteau are: an almond and beurre noisette crunchy, a cream cheese mousse, a mango mousse which gives a fruity and exotic touch to this classic elaboration, and finishing touches with a layer of yellow paint for a velvet finish, a mango glaze, pieces of mango, and lime zest.
