Exotic entremets

An hors d'oeuvre full of exotic and refreshing nuances in which we work with fruits such as mango and coconut and with a dry fruit such as almonds. We have opted for the naturalness of the flavors and colors of the ingredient itself. The different textures from bottom to top are: a coconut crunchy, a coconut dacquoise and mousse, and a creamy that combines tropical and acid flavors of banana, mango, passion fruit and coconut. The final finish of this hors d'oeuvre is achieved by playing with a glaze and a brunoise of fresh mango, along with coconut slices and passion fruit seeds.
