Exotic entremets

A dessert full of exotic and refreshing nuances in which we work with fruits such as mango and coconut and a nut such as almond. We have opted for the natural flavors and colors of the ingredients themselves. The different textures from bottom to top are: a coconut crunch, a dacquoise and coconut mousse, and a cream that combines tropical and tart flavors of banana, mango, passion fruit, and coconut. We achieve the final finish of this dessert by playing with a glaze and a brunoise of fresh mango, along with coconut flakes and passion fruit seeds.
