5. How to choose a thickening agent

In this lesson, we give you some advice to bear in mind when it comes to choosing a thickening agent for your preparations. You will study what factors influence this selection process, such as: whether you are going to be working with or without the application of heat, which other ingredients come into play in the recipe and how they might interfere with the thickener, the amount of dry extract you have, and finally, what texture you want to achieve.
