A petit gâteau that evokes the highest mountain in Japan, Mont Fuji. We worked with chestnut, and we also added two very interesting, aromatic, and acidic Japanese fruits; yuzu and sudachi. It is composed of an almond and coconut oil crunchy base, a yuzu, sudachi and chestnut mousse, a sudachi gelée, a chestnut creamy, and a candied chestnut, a neutral glaze, and a gold leaf for decoration.
